You may want to look over hReview and the research that has gone into 
listings as there may be some overlap with the information you are 
trying to present.

That being said, 'niche' applications don't necessarily exclude the use 
or creation of a micoformat.  There are a lot of people out there 
talking about and selling wines, and a little bit of collaboration about 
the way information is shared is never a bad thing.  If you followed the 
microformats creation process and got to creating a strawman proposal, 
it may not have the backing to become an officially sanctioned format, 
but it would probably help others in the same boat.

At least, that's the way I see it.
