There are many, many properties that are not explicitly discussed on that page.

Well, what exactly are you interested in learning about the email property?

It works the same as just about every other property. You can use it
on any element, but depending on which you choose the semantics define
where to extract the data.

More specifically, if you choose and 'a' element, then the email
address will be exrtracted from the href attribute and it will use the
value of the string after the 'mailto:'

Email does have TYPEs, but they are not what you would expect and
therefore are mostly ignored.
